15-minute Shrimp Stir-Fry with Noodles

An easy 15-minute shrimp stir-fry with noodles, onions, bell pepper, broccoli, and egg coated in a flavorful savory sauce.

what you’ll need:

  • Store-bought fresh noodles: I love using store-bought fresh noodles for the convenience. I always keep a few extra around for quick noodle meals.
  • Shrimp: this recipe uses shrimp but any protein of choice (tofu, chicken, beef, etc.) will work too.
  • Egg: I like to add scrambled eggs to my stir-fry dishes for extra protein.
  • Veggies: I used broccoli, bell peppers, and onions for this recipe. This is a perfect way to do a fridge clean-out and use any veggies you have on hand.
  • Oyster sauce: a staple ingredient for the sauce.
  • Soy sauce: this adds a different layer of savory flavor to the sauce.
  • Sesame oil: a drizzle of sesame oil at the end just elevates the dish.
  • Garlic: minced garlic is sauteed with the veggies to add a subtle garlicky flavor.
  • Dark soy sauce: this isn’t as salty as regular soy sauce but has an intense, almost concentrated flavor. Dark soy also adds a glossy, dark brown color to the stir-fry dish.
  • Neutral oil: any neutral oil of choice for cooking
  • White pepper: I prefer white pepper for stir-fry recipes since it has more of a pungent flavor than black pepper. However, black pepper will do if you can’t find white pepper.

Let’s start by heating some neutral oil in a wok (or large skillet) on medium heat. Add your peeled and deveined shrimp to the hot wok. Cook the shrimp until done, about 3-5 minutes. Remove the cooked shrimp from the wok and set it aside.

Add some more oil (if needed) to the wok and add your beaten eggs. Using a wooden spatula, scramble the eggs until they’re fluffy and done. Remove the scrambled eggs from the wok and set it aside.

Add a little more oil (it’s hard to get restaurant-style stir-fry if you skimp on the oil) to the wok and add the minced garlic. Cook until the garlic is fragrant and add the veggies to the wok. Saute the veggies until tender with a slight bite to them.

Now, let’s add our seasonings. Add the soy sauce, oyster sauce, dark soy sauce, and white pepper to the veggies.

Add the cooked shrimp and scrambled eggs back to the wok and mix to combine. Add the fresh noodles to the wok and gently toss everything together until combined.

Drizzle some sesame oil over the noodles before serving for added nutty flavor. Enjoy!

  • ½ pound of large shrimp, peeled and deveined
  • 3 eggs, beaten
  • 1 cup broccoli

  • 3 tablespoons oyster sauce
  • 1½ tablespoons soy sauce
  • 1 tablespoon dark soy sauce
