Cozy, comforting, and so hearty. This beef bulgogi hot pot is loaded with savory, marinated beef and flavorful vegetables making this dish the perfect one-pot dinner for the whole family.
what is bulgogi hot pot?
Bulgogi refers to thinly sliced beef (usually sirloin) marinated in savory, slightly sweet marinade. It’s most commonly enjoyed grilled or Korean BBQ style.
Bulgogi can also be enjoyed as a hot pot dish with an assortment of veggies such as mushrooms, onions, leafy greens, and noodles! It’s the perfect dish for entertaining guests since it’s appealing to the eye and fun to grab the cooked ingredients out of the pot.
what you’ll need:
For bulgogi:
- Beef: thinly sliced sirloin or brisket is preferred for this.
- Soy sauce: this is an essential ingredient as it acts as the base for the marinade.
- Sugar: you can alternatively use honey or agave in place of sugar.
- Rice cooking wine: this helps remove any ‘gamey’ smell from beef and tenderize it as well.
- Garlic: minced garlic adds a subtle spicy flavor to the marinade and helps balance out the flavors.
- Sesame oil: another essential ingredient in Korean marinades, sesame oil adds a nice rounded nuttiness to the marinade.
- Asian pear juice: Grated Asian pear is normally used, but using pear juice is my cheat way and works just as well for me. It still adds the same sweetness and helps tenderize the meat. Just make sure you buy the Asian pear juice with pear pulp in it.
- Black pepper: a pinch of black pepper adds a subtle sharpness without overpowering the marinade.
Other ingredients:
- Mushrooms
- Onions
- Carrots
- Green onions
- Napa Cabbage
- Zucchini
- Glass noodles
The best part about hot pot is that you can add any other ingredients that your heart desires! I love adding puffy tofu and udon noodles too!
For the broth:
- Broth coins: I love using broth coins to make a quick broth. There are many different flavors and contain a variety of different vegetables or seafood in a tablet form. Just dissolve the broth coin in some water and you’ll have a quick and flavor broth in just a few minutes!

all the details
Let’s marinate the beef!
In a large mixing bowl, combine the thinly sliced beef, soy sauce, sugar, rice cooking wine, garlic, sesame oil, Asian pear juice, and black pepper. Using your clean hands, gently massage the meat to mix the ingredients and to evenly coat the meat. Cover the meat and set it aside.
If using glass noodles, soak them in water according to the package directions.
Prepare the vegetables by cutting them into bite-size pieces.
In a shallow pot, arrange the vegetables neatly along the perimeter of the pan and place the marinated beef in the center.
Add the broth coins in the center and carefully pour the water over the ingredients. Bring the pot to a simmer on medium-high heat. You can choose to add the glass noodles now or later as you eat. (I love cooking this dish at the table with a portable stove as it’s entertaining to cook extra vegetables in batches).
