Curry Udon Noodles

Chewy, bouncy udon noodles in a rich and flavorful Japanese curry is the ideal meal cozy weeknight dinner. This one-pot recipe comes together in less than 15 minutes, making it perfect for busy weeknights!

what you’ll need:

  • Japanese curry cubes: there are many brands of curry roux cubes, but I prefer the brand Golden Curry in medium hot.
  • butter
  • potatoes
  • carrots
  • onions
  • cabbage
  • Japanese-style udon noodles: this can be found in most Asian grocery stores in the freezer aisle. Some of my favorite brands are Shirakiku and Haioreum.
  • green onion: for a garnish, but optional!

Prep your veggies

Cut the vegetables into bite-sized pieces and set them aside.

Cook the udon noodles

Bring a pot of water to a boil and cook the udon noodles until soft, for about 1-2 minutes. Strain and set them aside.

Cook the curry

In another pot, melt the butter on medium heat. Add the vegetables and saute until the onions become translucent. Add the water and curry cubes. Stir to combine and lower heat to low. Allow the curry to simmer until it thickens, for about 3 minutes. Add the udon noodles and top with green onions. Enjoy!

Ingredients

  • 2 servings of udon noodles, thawed
  • 2 cubes Japanese curry roux
  • 1 tablespoon of butter
  • 2½-3 cups water (or broth of choice)
  • 1 carrot, chopped
  • 1 cup onion, chopped
  • ½ cup cabbage, chopped
  • ½ cup potatoes, chopped

Optional topping:

  • 1 green onion, chopped

Instructions

  1. Prepare all the vegetables by cutting them into bite-sized pieces. Set them aside.
  2. Bring a pot of water to a boil and cook the udon noodles according to package instructions. Strain and set them aside.
  3. In another pot, melt the butter on medium heat and add the vegetables. Saute until the onions are translucent.
  4. Add the water (or broth) and curry roux cubes into the pot. Stir to make sure the curry roux cubes are fully dissolved. Lower the heat to a simmer and allow the curry to thicken, for about 2 minutes.
  5. Add the udon noodles to the curry and garnish with chopped green onions. Enjoy!
