I tried another viral breakfast recipe– grated egg avocado toast but added some miso butter spread and it was amazing. Grating the egg on top of the avocado gives you this fluffy, buttery, melt-in-your-mouth kind of texture. It’s really good on toast but can also be used in sandwiches, salads, or even as a topping on fried rice.

What you’ll need to make grated egg toast:
- Bread: any choice of bread would be delicious for this recipe.
- Miso butter: is made by mixing soften butter and white miso paste. This spread is nutty, buttery, and savory– it would be so good on other things too!
- Avocado
- Hardboiled eggs
How to make grated egg toast with miso butter:
Hard boil your egg
I like to make my hardboiled eggs on the stovetop. Prepare a bowl with some ice and water to make an ice bath for your eggs later.
Fill a small pot with cold water and gently add your eggs. On medium heat, bring the water to a boil. Once the water is boiling, turn off the heat and cover the pot with a lid. Set your timer for 8 minutes. We’re aiming for well-done hardboiled eggs to make it easier to grate over the toast.
Transfer the eggs using a slotted spoon to the ice bath. This stops the eggs from cooking further. Peel the eggs and set them aside.
Let’s make miso butter
Make miso butter by mixing softened butter and white miso paste. Spread the miso butter on both sides of the bread slice. Toast your bread slices in a skillet on medium-low heat until both sides are golden.
Make your avocado toast, whichever way you’d like.
Using a grater or microplane, grate your hardboiled egg over your toast.
I sprinkled some fresh cilantro on my toast, but it’s optional. A drizzle of chili oil would be delicious too!
