Hatch Chile Cornbread Waffles

These hatch chile cornbread waffles are filled with a cheesy green chile center, and loaded with crispy bacon bits, sour cream, and cilantro. They come together in less than 10 minutes and make a delicious savory breakfast (or dinner!).

what you’ll need:

  • cornbread: I used frozen cornbread for convenience, but feel free to make it from scratch!
  • shredded cheese: I used mozzarella, but any cheese of your choice would work.
  • hatch green chile: you can find this in the canned vegetable aisle at most grocery stores!
  • additional toppings: crispy bacon bits, cilantro, and sour cream just felt right and elevate the waffles even more!

These hatch chile cornbread waffles are so easy to make but a delicious savory breakfast. I’ll even have them for dinner!

Cut each frozen cornbread in half crosswise.

Place the bottom half of the cornbread onto your heated waffle iron.

Add 1/2 tablespoon of hatch green chili and shredded cheese onto the bottom half of the cornbread.

Place the top half of the cornbread on top of the shredded cheese. Cook until golden and crisp.

  • 1 (4 oz) can of hatch green chile
  • 1 tablespoon sour cream, or more
  • 4 strips bacon, cooked and chopped
  • 1 cup mozzarella cheese, shredded
