Jjimdak (Korean Soy-Braised Chicken)

by Yejiskitchenstories

Loaded with chicken, potatoes, carrots, and glass noodles, this comforting braised chicken dish is called Jjimdak! A perfect dinner for the whole family!

what is Jjimdak?

“Jjim” (찜) means to braise and “dak” (닭) means chicken in Korean. This dish is also called “Andong Jjimdak” since it originated in the city of Andong in Korea.

This is a comforting and savory dish made with tender chicken and various vegetables in a soy-based sauce. It’s one of my favorite dishes growing up and I often make it for my toddler, who loves it too!

I especially make this once the weather starts to get chilly, it’s such a comforting, cozy dish to enjoy with rice!

what you’ll need:

  • Chicken: I used drumsticks for this, but feel free to use thighs or other cuts of chicken
  • Potatoes
  • Carrots
  • Green onion
  • Glass noodles
  • Onion
For the sauce:
  • Soy sauce
  • Sugar
  • Cooking rice wine
  • Garlic
  • Sesame oil
  • Water

all the details

Add the chicken to a large pot and fill it with water until it covers the chicken. Bring the pot to a boil on high heat to parboil the chicken and skim off any excess scum and fat.

In a bowl, mix all the sauce ingredients and set it aside.

In a big bowl, add the glass noodles and fill the bowl with water until it covers the noodles. Allow the noodles to rehydrate and soak for 7-10 minutes.

Drain the chicken and transfer it to a clean braising pot. Add the sauce mixture and bring it to a boil on medium-high heat. Cover and cook for 10-15 minutes.

Add the potatoes, carrots, and onions to the pot. Gently stir to coat the vegetables with the sauce. Reduce the heat to medium to simmer. Cover and cook for another 8 minutes.

Add the glass noodles and green onion, and simmer for about 3-5 minutes, or until the noodles are soft and cooked.
