Kimchi Grilled Cheese Panini

The ultimate comfort food, Kimchi Grilled Cheese! Tangy, spicy kimchi, and melty cheese sandwiched between two toasty slices of flatbread, it’s the perfect quick meal!

What you’ll need:

  • Kimchi: I like to use ripe kimchi for this recipe. It has a nice sourness that brightens up a grilled cheese sandwich!
  • Bread: I used flatbread for this recipe, but any kind of bread would be delicious (such as sourdough, rye bread, Japanese milk bread, etc)
  • Cheese: I used mozzarella for this recipe, but feel free to use any cheese of your liking. Mild cheeses would work best for this. I do not recommend using any cheese that is too strong in flavor such as goat cheese, bleu cheese, or anything of that nature.
  • Mayo: for toasting

Kimchi Grilled Cheese Panini

  • ¼ cup kimchi, ripe
  • ¼ cup mozzarella cheese, shredded
  • 1 sheet of flatbread, cut in half (or bread of choice)
  • 1 tablespoon mayo, for toasting


  1. Cut 1 sheet of flatbread in half to create 2 pieces. Spread mayo on both pieces of flatbread. Place a piece of flatbread on top of the waffle maker (mayo side down) and add cheese and kimchi on top of the flatbread. Place another piece of flatbread (mayo side up) on the kimchi cheese filling.
  2. Close the waffle maker and firmly press down until the grilled cheese is golden brown and toasted.
  3. Remove the grilled cheese from the waffler maker and enjoy!


To make on the stovetop: Follow the first step above, but use a cast iron skillet on medium heat.
