Korean Beef Roll Freezer Meal Kit (소고기 말이 전골)

by Yejiskitchenstories

As a busy mom, I’m always looking for ways to make dinner just a little easier — without giving up the cozy, comforting flavors I grew up with. These Korean beef veggie rolls are a freezer meal dream.

You prep everything raw ahead of time, tuck it into a container, and when dinnertime comes around? Just add broth and noodles, and you’re done.

No marinating, no pre-cooking — just roll, freeze, and simmer.

Why You’ll Love It

This dish is somewhere between shabu-shabu, jeongol (hot pot), and your favorite cozy noodle soup — but with a shortcut.

It’s high in protein, loaded with veggies, and toddler-approved (mine slurped the udon and asked for more meat!).

Ingredients (for one freezer kit)

Beef rolls:

  • 10–12 slices of thinly sliced beef (like bulgogi-style ribeye)
  • 1 bunch bok choy (blanched & squeezed)
  • 1 pack enoki mushrooms (trimmed and separated)

Vegetables for broth:

  • Napa cabbage
  • Onion slices
  • (Optional: shiitake mushrooms, carrots, green onions)

Broth & finishers (added when cooking):

  • 2 cups beef or bone broth
  • 1 pack frozen udon noodles
  • Salt, pepper, and a splash of soy sauce or sesame oil to taste

How to Prep the Freezer Kit

  1. Blanch the bok choy for 1–2 minutes, then rinse under cold water and squeeze out excess moisture.
  2. Assemble the beef rolls: Lay a slice of beef flat, place a few enoki strands and a piece of bok choy in the center, and roll it up tightly. No need for toothpicks — just place seam-side down.
  3. Pack into a freezer-safe container with your other raw vegetables like napa cabbage and onion. Layer the beef rolls on top so they’re easy to grab and lay in the pot later.
  4. Freeze flat, then transfer to long-term freezer storage (good for 1–2 months).

How to Cook

  1. In a pot, pour in 2 cups of bone broth (or your broth of choice) and bring to a simmer.
  2. Add the frozen beef rolls and veggies, cover, and cook for about 10–12 minutes.
  3. Toss in a pack of frozen udon noodles, cook a few more minutes, and adjust seasoning with salt, soy sauce, or sesame oil.

That’s it — a warm, protein-packed dinner in under 20 minutes.

Notes & Variations

  • Swap bok choy with spinach, perilla leaves, or julienned carrots
  • Don’t overcrowd the pot — let everything simmer gently
  • Add tofu, eggs, dumplings or extra noodles to stretch it for more people

Make-Ahead Magic

This has become one of my go-to batch prep meals. I usually make a couple kits at once — some with spicy broth for the adults, and mild ones for my toddler.

It’s just one of those meals that feels like a hug after a long day — and I love knowing it’s already waiting in the freezer when I need it most.
