This copycat of Lou Malnati’s Salad tastes like the one I had in Chicago. It’s made with fresh romaine lettuce, mushrooms, cherry tomatoes, black olives, crispy salami, and crumbled gorgonzola, drizzled with a sweet vinaigrette. This salad is so fresh and addictingly good that I crave it all the time!


What you’ll need for this copycat of Lou Malnati’s Salad:
For the salad:
- Romaine lettuce
- Salami: crispy salami really adds a savory crunch to the salad. I used genoa salami for this dish.
- White mushrooms
- Cherry tomatoes
- Gorgonzola crumbles
- Black olives
For the sweet vinaigrette:
- Honey
- White wine vinegar
- Olive oil
- Lemon
- Garlic
- Salt
- Parmesan cheese

How to make Lou Malnati’s salad at home:
To make the sweet vinaigrette:
Whisk the honey, white wine vinegar, olive oil, lemon juice, minced garlic, salt, and grated parmesan together in a bowl. Set this aside to drizzle over the salad.
To assemble the salad:
Slice or dice up the salami. In an air fryer or stovetop, cook the salami until they become crispy!
In a large salad bowl, combine chopped romaine lettuce, crispy salami, sliced white mushrooms, cherry tomatoes (halved), black olives, and crumbled gorgonzola cheese. Drizzle the sweet vinaigrette we made earlier and toss everything together.
