Mayak Eggs (Korean Marinated Eggs)

Have you tried Mayak Eggs (마약계란) before? These eggs are soft-boiled and then marinated in a sweet, spicy soy sauce. It’s delicious as a side dish or served over a bed of steamed rice.

What are Mayak Eggs?

Mayak literally means drug — meaning that these eggs are seriously addictively tasty!

Mayak eggs are soft-boiled eggs marinated in a sweet, spicy, savory soy sauce.

What you’ll need to make Mayak Eggs:

  • Eggs
  • Green onions
  • Garlic
  • Thai chili peppers
  • Sugar
  • Soy sauce
  • Water
  • Roasted sesame seeds

How to make this at home:

Let’s make soft-boiled eggs

Bring a large pot of water (just enough water to cover eggs) to a boil over high heat. Once the water is boiling, carefully add your eggs to the boiling water.

Cover the pot with a lid and allow the eggs to cook for 7 minutes. Once the eggs have cooked for 7 minutes, remove the eggs from the pot and place them in an ice-water bath.

Peel the eggs and set them aside.

Now, for the soy marinade

In a glass container, add sugar, soy sauce, and water. Stir to combine.

Add the chopped green onion, minced garlic, chopped Thai peppers, roasted sesame seeds, and peeled soft-boiled eggs.

Stir to combine and to make sure the eggs are fully submerged.

Chill the eggs in the refrigerator for at least 4 hours, but overnight is best!

Serve them as a side dish or over freshly steamed rice. Enjoy!

Ingredients

  • 10 eggs
  • 3 cloves of Garlic
  • 1 cup Green onions, chopped
  • 5 Thai chili peppers
  • 1 cup Sugar
  • 1 cup Water
  • 1 cup Soy sauce
  • 2 tablespoons Roasted sesame seeds

Instructions

  1. Bring a large pot of water to a boil over high heat. (Fill the pot with just enough water to cover the eggs)  Once the water is boiling, carefully place the eggs in the boiling water.
  2. Cover the pot with a lid and allow the eggs to cook for 7 minutes. After 7 minutes, remove the eggs from the pot and place them into an ice bath. Peel the soft-boiled eggs and set them aside.
  3. In a glass container, add the sugar, soy sauce, and water. Stir to combine.
  4. To the glass container, add the green onion, garlic, Thai peppers, roasted sesame seeds, and peeled soft-boiled eggs.
  5. Stir to combine and make sure the eggs are fully submerged in the sauce.
  6. Cover and chill in the refrigerator for at least 4 hours, but overnight is better!
  7. Enjoy as a side dish or serve over fresh, hot rice!

 

Notes

Store the eggs in the refrigerator for up to 1 week. This dish is best enjoyed within a week 🙂
