Menbosha 멘보샤 | Mian Bao Xia (Korean Chinese Shrimp Toast)

Menbosha (멘보샤) is a shrimp toast with minced shrimp filling sandwiched between two slices of white bread then traditionally deep fried until golden and crispy. It’s crispy on the outside, but tender and savory on the inside. They’re like crisp mini shrimp sandwiches, perfect as an appetizer or snack!

I was inspired to make this when I saw a Korean celebrity chef, Lee Yeon Bok, make this on a TV show a couple of years back. These shrimp toasts are traditionally deep fried, but I wanted to make them a little “healthier” by air frying it. It turned out just as crispy, golden, and delicious!

What you’ll need to make Menbosha (Korean Chinese Shrimp Toasts):

  • White bread
  • Shrimp
  • Green onion
  • Egg white
  • Corn Starch
  • Cooking rice wine
  • Black pepper
  • Salt
  • Canola oil spray: or any neutral oil

How to make Menbosha at home:

To make the shrimp filling:

Add the minced shrimp, chopped green onion, egg white, cornstarch, cooking rice wine, and salt + pepper to a large mixing bowl. Mix the ingredients together until combined, this will be our shrimp filling.

To assemble the shrimp toasts:

Trim the crust off each slice of bread. Cut each slice of bread into 4 equal pieces.

Place about 1 tablespoon of the shrimp filling and sandwich it between two pieces of bread, I was able to make 12 shrimp toasts.

Spray both sides of each shrimp toast with canola oil spray. Place the shrimp toasts in an air fryer basket or sheet pan (depending on the type of air fryer) and bake at 350ºF for 5-6 minutes, or until golden and crispy.

Serve with sweet chili sauce or dipping sauce of choice!

Ingredients

  • 6 slices of white bread
  • 10 large shrimps, deveined + deshelled
  • 2-3 stalks of green onion
  • 1 egg white
  • 3 tablespoons cornstarch
  • ½ tablespoon cooking rice wine
