Juicy and savory grilled short rib and pork patties with mushroom, coated in a soy honey glaze. Mushroom Tteokgalbi is the perfect fancy dish for a special occasion that will surely wow your guests!
What is tteokgalbi?
Tteokgalbi is a Korean beef dish made with seasoned minced beef short rib (and mushroom in this case). What was once originally a royal dish served to the Korean king, is the perfect dish to impress your guests when hosting! These juicy beef patties are easy to make but look and taste fancy.
Growing up, my mom would make this on special occasions such as holidays or when we had guests over for dinner. It’s the perfect easy main dish to put on your next holiday menu.

What you’ll need:
- ground beef: minced beef brisket/short rib mix is preferred for this dish
- ground pork: I like to mix ground pork to achieve a juicier patty
- king oyster mushrooms: these are cut into quarters and then wrapped in the beef patty mixture
- soy sauce: the main seasoning ingredient for the patty mixture and sauce
- sugar: you can substitute with honey or sweetener alternative.
- green onion
- garlic
- sesame oil
- sweet rice flour: this helps as a binder to keep the meat patty stay intact
- onion
- maesil syrup (Korean plum extract): this is a slightly fruity syrup that acts as a sweetener in the sauce

All the details
In a large mixing bowl, combine the ground beef, ground pork, soy sauce, sugar, chopped green onions, minced garlic, sesame oil, sweet rice flour, and minced onion. Using clean hands or wearing disposable gloves, gently massage the meat mixture to evenly mix all the ingredients. Set it aside.
Cut the king oyster mushrooms into quarter slices, lengthwise.
Grab about 1-2 tablespoons of the ground meat mixture and wrap it around each slice of mushroom. Repeat this step for the remaining ingredients. Set them aside.
In a small bowl, combine soy sauce, maesil syrup (Korean plum extract), water, and sesame oil. Stir to combine. Set it aside.
Heat some oil in a skillet on medium-high heat. Place each mushroom beef patty onto the skillet and cook for about 10 minutes, flipping halfway.
When the beef patties seem fully cooked, reduce the heat to low and pour the soy honey sauce over the patties. Cover and cook for another 3-5 minutes.
Garnish with toasted sesame seeds and green onions!
Make it a meal
We usually eat these with a bowl of hot rice, some kimchi, and a few quick banchan (side dishes) from the fridge. But they also make great freezer meal prep—just shape and freeze raw patties between parchment, then cook from frozen when needed.
Or if you’re in “feed the toddler now” mode, they’re amazing as little meat sliders with rice balls or wrapped in lettuce. I’ve even tucked them into lunchboxes cold the next day, and they still taste amazing.
Tteokgalbi is one of those dishes that looks impressive but feels like a hug from the inside. Whether you’re cooking for family, friends, or just yourself, it’s one of those reliable, delicious go-tos I keep coming back to.
