A freezer-friendly version of a classic comfort stew — pork kimchi jjigae (김치찌개). Perfect for busy weeks, postpartum recovery, or quick solo dinners when you’re already cooking for others.
This version uses thinly sliced pork shoulder and well-fermented kimchi, and can be made into freezer kits ahead of time. To serve, simply defrost, simmer with broth, and enjoy.
Ingredients (1 freezer kit)
1 cup ripe napa cabbage kimchi, chopped
6 oz thin-sliced pork shoulder or pork belly
½ block firm tofu, cubed
1 stalk green onion, chopped
1 tsp gochugaru (Korean red pepper flakes)
1 tsp minced garlic
2 slices fresh ginger (optional)
1 teaspoon miso paste
To add when cooking:
1 tablespoon sesame oil
splash of cooking wine
2 cups water, pork bone broth, or veggie broth
Prep Instructions
Add all ingredients (except broth/water) into a freezer-safe container.
Seal, label, and store in the freezer.
Keeps for up to 3 weeks.
To Cook
Thaw on the counter for 15 minutes or cook straight from frozen.
Add the frozen pork into a pot with sesame oil and a splash of cooking wine on low heat. Allow the pork to thaw and cook on low heat for approximately 5 minutes before adding the rest of the ingredients.
Add the water or your broth of choice and bring it to a boil, then reduce heat and simmer 10–15 minutes.
Serve hot with a bowl of steamed rice.
Notes
You can batch 2–4 kits at once for future meals.
Swap pork for canned tuna, sliced brisket, or mushrooms for variations.
Optional add-ins: zucchini, onion, rice cakes, or enoki mushrooms.
