Puff Pastry Honey Roasted Tomato Tarts

These puff pastry tomato tarts are crispy, crunchy, fresh, and savory. It only takes 5 ingredients for these delicious tarts to come together— making them the perfect for brunch, as an appetizer, or a snack!

What you’ll need:

  • Store-bought puff pastry dough: this can be found in the freezer section near frozen desserts.
  • Cherry tomatoes: I used cherry tomatoes since they are sweeter, but you can use any kind of tomato!
  • Goat cheese: pairs really well with roasted tomato and honey.
  • Honey: perfect to help caramelize the tomatoes when roasting.
  • Olive oil: or any neutral oil of choice.
  • Salt + pepper: for seasoning
  • Egg: for egg washing the puff pastry dough
  • Parsley: optional garnish

How to make these Puff Pastry Honey Roasted Tomato Tarts:

  1. Preheat the oven to 350ºF and prep a baking sheet lined with parchment paper.
  2. Cut the puff pastry sheet into 4 equal pieces. Slice the tomatoes into halves.
  3. Drizzle olive oil and salt + pepper onto the parchment paper and add a layer of tomatoes on top of the olive oil.
  4. Drizzle honey on top of the tomato halves and place a piece of puff pastry dough on top of the tomatoes. Using a fork, lightly press down the edges to seal it closed.
  5. Brush egg wash on top of the push pastry. Bake for 25 minutes or until golden brown.
  6. Use a bench scraper or spatula to flip the cooked puff pastries over. Garnish with goat cheese crumbles and enjoy!

Ingredients

  • 1½-2 cups cherry tomatoes, rinsed and halved
  • 4 tablespoons  honey, or sweetener of choice
  • ½ cup goat cheese, crumbled
  • 2 tablespoons olive oil
  • 1 sheet frozen puff pastry dough, divided into 4 pieces
  • 1 egg, for egg wash

Optional garnish: 

  • 2 tablespoons parsley, chopped
