Smashed Cucumber Salad (Oi Tangtang)

by Yejiskitchenstories

This smashed cucumber salad is a light and refreshing salad dressed in a vinaigrette made with garlic, Thai peppers, and a pinch of salt and sugar. It’s the perfect quick salad to accompany any meal!

My family makes some variation of this smashed cucumber salad whenever we want a refreshing side dish with a meal. Sometimes I’ll swap out the Thai peppers for gochugaru (Korean chili powder) which also gives the smashed cucumber salad an appetizing red hue!

What you’ll need:

  • Persian cucumbers: Any cucumber works but I love the crispy texture!
  • Garlic: minced garlic adds a nice kick to the cucumber salad
  • Vinegar: this is the main base of the vinaigrette dressing
  • Pinch of sugar: to help round out the flavors
  • Pinch of salt: season to taste
  • Thai chili peppers: alternatively use gochugaru (Korean chili powder)
  • Sesame seeds: for a garnish

All the details:

On a flat surface, lay a rolling pin or the flat surface of a knife against the cucumber. Gently press down on the cucumbers to smash them. They should smash down into smaller, jagged pieces. Transfer them to a bowl.

Add vinegar, sugar, salt, minced garlic, and diced Thai peppers to the bowl. Toss all the ingredients together to combine. Garnish with toasted sesame seeds and enjoy!
