Soboro Beef (Garlicky Ground Beef)

Savory, garlicky, high in protein, packed with flavor, all in less than 10 minutes. This soboro beef will be your family’s favorite ground beef recipe!

what is soboro beef?

Soboro refers to the Japanese style of cooking seasoned minced meat, commonly served over steamed rice.

This is a great recipe to make a batch of and serve in differently versatile ways, such as in tacos, over omelets, mixed in fried rice, as a filling for kimbap (Korean seaweed rice rolls), or as a topping for savory oatmeal.

It’s an easy and tasty way to cook minced meat, making it toddler-friendly too!

what you’ll need:

  • ground beef (or any ground protein of choice): I like to use an 80/20 fat-to-lean ratio, but feel free to use what you like.
  • garlic
  • green onion
  • carrots
  • onion
  • soy sauce
  • mirin
  • pear juice
  • ginger powder
  • optional toppings: fried egg, green onions, and sesame seeds

Prepare the vegetables

Cut the carrots and onion into a small dice. Chop the green onions and mince the garlic. Set them aside.

Let’s make the sauce

In a bowl, combine the soy sauce, mirin, pear juice (you can alternatively use agave, sugar, or sweetener of choice), ginger powder (or grated ginger), and minced garlic. Set it aside.

Cook ground beef

Heat some neutral oil in a skillet on medium-high heat. Add the ground beef to the skillet and use a wooden spoon to break it up into smaller crumbles. Brown the ground beef for 1-2 minutes.

Add the chopped green onions, carrots, and onions to the skillet.

Add the sauce to the beef and stir to combine. Continue to cook until the beef has absorbed all the sauce and the beef is evenly browned, or no longer pink.

Serve the soboro beef over rice. Garnish with chopped green onions, sesame seeds, and a fried egg!
