Fluffy, airy NO-KNEAD focaccia pizza crust, loaded with cheese, and soppressata, with a drizzle of spicy and sweet gochujang honey, is THE pizza you’ll want to sink into and indulge, slice by slice. Just make sure you make extra, it won’t last long on the table.
what you’ll need:
For the focaccia dough
- bread flour
- active dry yeast
- sugar
- olive oil
- salt
- water
Pizza toppings
- soppressata salami
- mozzarella cheese
- tomato pizza sauce
- gochujang hot honey

all the details
Make the focaccia pizza dough
Combine the yeast, 1/2 cup of warm water, and sugar in a large mixing. Let it rest for the yeast to bloom for 5 minutes.
Add the bread flour, the remaining water, olive oil, and salt. Using a wooden spoon, stir to mix well. It should be a sticky dough consistency.
Cover the dough with a kitchen towel and set it in a warm place until the focaccia dough doubles in size, for about 1 hour. I like to turn my oven to the lowest temperature and set the dough near it.
Assembling the pizza
Generously grease a 9 x 13 baking pan with olive oil. Preheat the oven to 425ºF.
Once the dough has doubled in size, turn the risen dough onto the greased baking pan. Drizzle the surface of the dough with olive oil.
Using your oiled fingers, gently spread the dough to the corners of the pan. It does not have to reach all the edges, but just enough to encourage it to spread out more. Set it aside and allow it to rise for another 20-30 minutes. This will make the dough easier to work with.
Use your oiled fingers to dimple all over the dough, pressing down until you feel the bottom of the pan. You may start to see bubbles form, do not pop them!
Time for toppings!
Add the tomato sauce on top of the dough and spread in an even layer. Sprinkle the cheese all over the tomato sauce and add the soppressata slices.
Transfer the pizza dough to the oven and bake for 20-25 minutes, or until golden on the edges.
Remove from the oven and drizzle the gochujang hot honey all over the pizza. Cut the pizza into squares and enjoy!

Tried this today. It is SO GOOOOD!!! And so easy. I used canned pasta sauce (only thing I had) & frozen chicken pepperoni. I think I’m going to experiment with other toppings next time. This is going to be my go-to pizza base!
Thank you!!! So glad you loved it!! 🙂
