The Best Garlic Green Beans

This is the best recipe for garlic green beans! They’re perfectly blistered with a slight crispy snap, and loaded with garlic. Everyone’s favorite side dish that only takes 10 minutes!

Garlic green beans are a staple side for our Chinese-Korean-American home. My husband is Chinese, so I try incorporating Chinese-style dishes since I mostly cook Korean food. My toddler absolutely loves these garlic green beans and that says a lot coming from a 2.5-year-old!

These garlic green beans are so flavorful with only a handful of ingredients. They’re so delicious that we never have any leftovers whenever I make them.

what you’ll need:

  • fresh green beans: make sure the green beans are rinsed and pat dry before flash frying.
  • garlic: tons of garlic is needed, but I’m a garlic lover so there’s never too much garlic for me.
  • oyster sauce: this gives the green beans a nice umami flavor, it’s an essential ingredient!
  • salt + pepper: for seasoning to taste
  • neutral oil: I like using canola oil whenever I am flash frying. Vegetable oil or avocado oil works great too, basically any neutral oil with a high smoking point.

Rinse and pat dry the green beans. We want them to be dry before flash frying them to get that nice blistered exterior.

Heat the neutral oil in a pan on medium-high heat. Dip one end of a wooden chopstick or skewer in the oil, if it starts to bubble immediately, the oil is ready! (If using a thermometer, the temperature should read 350ยบF)

Fry the green beans for about 3 minutes, the green beans should be blistered but maintain a slight crisp. Remove the green beans from the pan and drain most of the oil from the pan, only leaving about 1 tablespoon of oil.

Add the green beans, garlic, and oyster sauce back to the pan. Saute the green beans until the garlic is aromatic, for about 1 minute. We do not want to brown the garlic. Season with salt and pepper to taste.
