I love a good sandwich with different textures, colors, and flavors, and that is exactly what this is! This is the ultimate veggie sandwich with so much flavor and crunch. I crave this sandwich at least once a week!
what you’ll need:
for the pistachio pesto:
- pistachios
- shredded parmesan
- olive oil
- fresh basil
- garlic
- salt + pepper
for the veggie sandwich:
- sourdough bread
- cucumber
- tomato
- avocado
- red onion
- arugula
- micro greens/sprouts
- a spread of your choice: I used pistachio pesto and hummus for this sandwich
The best part about this veggie sandwich is that the sky is the limit for veggie combinations! These are my go-to veggies, but feel free to spruce your sandwich up with bell peppers, lettuce, radish, pickles, etc!
This pistachio pesto is such a yummy spread! I love using this on my sandwiches or for pasta too, so versatile and full of flavor.

all the details
This sandwich is pretty straightforward and doesn’t really need a recipe, but here it is as a reference 🙂
Add the pistachios, parmesan cheese, fresh basil, garlic, salt, and pepper in a food processor. Pulse all the ingredients until finely chopped.
With the food processor still running, slowly add the olive oil until completely combined. For a thinner pesto consistency, feel free to add more olive oil. Pause and scrape down the sides in between pulses. Transfer the pesto to a container and set it aside.
Toast your bread using your preferred method. I like using my air fryer since it’s quick and hassle-free. Prepare all your veggies by thinly slicing the tomato, red onion, cucumber, and avocado.
Start building your sandwich. Spread the pesto and hummus over one side of each piece of bread. Load up all the veggies (with your desired amount) and top with the other slice of bread. Enjoy!
