This dish was inspired by Turkish eggs, also known as Çılbır. Dipping crusty bread in the garlicky yogurt paired with the spicy gochugaru chili butter is amazing. It’s tangy from the yogurt, spicy from the chili butter, and the jammy poached egg just tops it all off!
This recipe would be great for breakfast or even as an appetizer. It’s such a perfect shareable dish, everyone will definitely be reaching across the table for it!

What you’ll need:
- Greek yogurt
- Garlic
- Eggs
- Butter (Salted)
- Gochugaru (Korean Red Chili Flakes)
- Bread of choice
- Salt + Pepper

How to make Turkish-style eggs with Gochugaru Chili Butter and Garlic Yogurt Sauce
Let’s make poached eggs
Bring a small pot of water to a low simmer, we don’t want a boil or it will cook the eggs too fast.
Use a spoon and stir the water in a big circular motion to create a whirlpool in the middle of the pot. Gently, crack your egg in the center of the ‘”whirlpool”. You can use your spoon to carefully push the egg whites towards the yolk, to get more of an even shape.
Now, for the gochugaru chili butter
Heat a small pot on medium heat and add the butter. Once the butter is melted, add the gochugaru and lower your heat. Let it simmer on low heat until the chili butter is fragrant, it should only take about 1-2 minutes.
Garlicky yogurt sauce
In a small bowl, combine your greek yogurt, grated/minced garlic, salt, and pepper (to taste). Stir to mix all the ingredients to make a garlicky yogurt sauce.
Toast your bread
This step is pretty self-explanatory! Toast your choice of crusty bread to your liking!
Let’s assemble
In a shallow bowl or plate, evenly spread your yogurt sauce. Drizzle some of the chili butter on top of the yogurt sauce, then carefully add your poached eggs. Finish by drizzling some more chili butter sauce and garnish is chopped parsley (optional) and crusty bread! Enjoy!
